The story behind Miraluna

From the Apaneca-Ilamatepec mountains, in the western region of El Salvador, comes this exceptional lot grown at Miramar Farm, owned by Andrés Salaverría, a fifth-generation coffee family with over 100 years of tradition.

After training at the Ernesto Illy Coffee University, Andrés returned to the country to lead a new phase at the family farm, incorporating controlled fermentation techniques and innovative processes to elevate the quality and sensory expression of Salvadoran coffee.

The Anaerobic Natural “Sleeping Bag” process combines prolonged cherry fermentation with uniform, slow drying.
This method intensifies notes of red fruits and peach, accompanied by honey and light caramel sweetness, and a deep finish of dark chocolate.
