El Rubí is an expressive and deep natural Geisha, grown in the mountains of Piendamó, in the Colombian Cauca. Its aromatic profile stands out for an elegant combination of dark fruits, cocoa notes, and spicy nuances, accompanied by a clean and complex structure.

In the cup, it offers an intense and sophisticated experience, with clear notes of ripe grape and blueberry, accompanied by fine cacao, black tea, and spices. Its acidity is bright and its body juicy, creating a balanced and persistent cup that shines especially in espresso.

The story behind El Rubí

In the mountains of Colombian Cauca, near Piendamó, producer Robinson Rivera cultivates microlots of exceptional varieties on his farm, where the altitude, climate, and volcanic soil create ideal conditions for coffees of great aromatic complexity.

This natural Geisha comes from lot MC-15, grown at 1,960 meters of altitude, where the slow development of the fruit allows sugars and aromatic compounds to concentrate, clearly reflected in the cup.

For this microlot, a carefully controlled fermentation process was used:

• anaerobic pre-fermentation in cherry for 48 hours,
• followed by slow open-air drying,
• preserving the fruit intensity and clarity of the profile.

The result is a coffee with a distinct personality: dark fruits, cacao, and spices, with a juicy body and a prolonged finish reminiscent of black tea infusions.

El Rubí represents a refined expression of Colombian Geisha: complex, elegant, and deeply aromatic.
