The story behind El Silencio Cider

In the mountains of Cauca , among the inter-Andean valleys of Piendamó , this Bourbon Cider is cultivated at Finca El Silencio , a family project that dates back to the 1970s and is now led by Robinson Rivera .

At an altitude of approximately 1,950 meters , under natural shade and with traditional agricultural practices, exotic varieties such as Geisha, Bourbon Rosado, Ají and Sidra thrive, finding ideal conditions in this terroir to develop complex aromatic profiles.

This microbatch was subjected to:

• a 36-hour anaerobic pre-fermentation in cherry ,

• followed by a 48-hour fermentation in parchment ,

• and slow air drying .

The result is a coffee with a silky texture, lingering sweetness, and a balanced combination of fruity, spicy, and citrus notes that reflect the richness of Cauca and the meticulous hand of the producer.
